Crispy Potato Wedges

Ingredients:*
- 6 medium-sized to large potatoes**
- Olive oil
- 1/3 cup flour (may be wheat, rice or potato flour)
- ½ tablespoon seasoning salt
- 1 teaspoon garlic powder
- ½ tablespoon basil
- 1 teaspoon black pepper
- 1 tablespoon parsley

Directions:
- Preheat oven to 300 degrees F.
- Peel and wash the potatoes. Cut the potatoes lengthwise into wedges about ½ inch thick. Spread the wedges out in one layer on a large cookie tray or a 9-by-13-inch brownie pan.
- Sprinkle olive oil over the potatoes in the pan.
- In a small bowl, combine the flour, seasoning salt, garlic powder, basil, black pepper and parsley. Mix thoroughly.
- Sprinkle the flour and spice mixture over the potatoes and olive oil. Once covered in the flour and spices, mix the potatoes by hand, spreading the flour and olive oil evenly. For best results, be sure that the wedges are laid out again in one layer.
- Place pan, uncovered, in the middle rack of the oven. Bake for 40 to 50 minutes. Turn the wedges over every 20 minutes to ensure that they bake evenly. Wedges are ready when they are golden and crispy on the outside and soft on the inside. Poke them with a fork to verify.
Spicy Potato Wedges Baking Tips
When cutting a potato into wedges, try cutting the potato in half lengthwise, then cutt each half into three even lengthwise slices. Cut very large potatoes in half across their width first, then treat each half as a whole potato.
